About Chocolate Chocolate story starts with Mayans, a Mexican tribe in Central America. They drank a dark drink named Cacahuaquchtl. The Aztecs, a local Mexican tribe, consumed Chacahoua drink and used cocoa grains as currency. In fact, transformation of raw and bitter grain of cocoa to a product called by a 17th century writer "the only food of deities" is the product of a fine art, or rather a mixture of science and alchemy art. Chocolate ingredients Chocolate is a uniform product that is the outcome of a complete and accurate process of mixture of one or more products of cocoa grain, including: cocoa paste, cocoa powder, cocoa butter along with sugar or permitted edible sweeteners, milk products and additives. Varieties of Chocolates simple, sugar free, covering chocolate, sweet chocolate, milky chocolate, flavored chocolate, mixed chocolate, filled (kernelled) chocolate, white chocolate, coated chocolate and morning chocolate. Cocoa and Chocolate Properties: There are stimulator materials such as Caffeine, Theobromine, Theophiline, and Tanon in cocoa, which have medicinal role thanks to stimulating effect that generates in kidney glomeruli, whereby it prevents formation of calculus and to a certain degree urolith. Use of chocolate also causes the endorphin hormone to be discharged in blood. This hormone has sedative effect and causes sleepiness. In addition to the abovementioned properties, chocolate ad cocoa contains minerals such as sodium, potassium, calcium, etc. Chocolate contains a high level of Flavonoid, especially Epicatechin that has positive effects on cardiovascular system. Chocolate contains alkaloids such as Theobromine and phenethyle amin, which have physiological properties for body. phenethyle amin joins Serotonine existing in brain. Scientists believe that moderate consumption of chocolate results in decrease in blood pressure and creates feeling of joy. It is believed nowadays that dark chocolate has benefits for health owing to its high content of antioxidant that results in decreasing free radicals. It should be noted however that theobromine is toxic and fatal for some animals like dog and horse.
